Gingerbread mini cakes

The ultimate festive bake to get you in the mood with a light fluffy gingerbread sponge.

It’s moist, fluffy and tender made with wholesome ingredients in one bowl. Packed with warming gingerbread spices and the cutest gingerbread shapes -also PERFECT at tea time on Christmas day .

Ingredients

1/2 cup Almond flour
1 1/4 cup Spelt flour
1 tsp Baking powder
1/2 tsp Baking soda
1 tsp Cinnamon
1/4 Salt
1 tsp Vanilla extract
2 Tbsp Ginger,ground
3 eggs
1/2 cup Almond milk
1 Tbsp Apple cider vinegar
1/2 cup Maple syrup or Honey

Method
Combine all the wet ingredients thoroughly, then gradually add the dry ingredients. Cook the mixture for 15 to 20 minutes until done (you can also use a muffin tray) .
