Add a splash of colour to your table with these Valentines Pink PanCakes
Used beetroot for color (rest assured, you won’t taste it ??)
Ingredients
? 1 Beetroot (medium size cooked)
? 1 Egg, large
? 2 tsp Baking powder
? 1/2 tsp Cinnamon
?1/2 cup Gluten-free flour
? 2 tbsp Milk (plant or any milk)
? 1/2 cup Greek Yogurt
Method
Place all the ingredients in a blender or food processor.
Blend the ingredients until they form a smooth batter. Make sure to scrape down the sides of the blender to ensure everything is evenly mixed.
Once the batter is smooth, heat a non-stick skillet or griddle over medium heat.
Pour a small amount of batter onto the skillet to form each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Continue cooking the remaining batter in batches, adding more oil to the skillet if necessary.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
